Ingredients
°1 tablespoon olive oil
°4 tablespoons Butter, divided
°1 mash Yukon Gold Potatoes cut into 1/2 inch cubes
°4 cloves minced garlic
°1 teaspoon dried rosemary
°1 teaspoon dried oregano
°1/2 teaspoon salt
°1/2 teaspoon pepper
°1 ½ pounds strip loin cut into 1 inch cubes
°freshly chop parsley for garnish optional
* Methods
Heat cast iron skillet on medium-high heat. Add the olive oil and 2 tablespoons of butter and melt the butter.
4 t butter divided, 1 t olive oil
Adding cutting potatoes, garlic, rosemary, oregano, salt &; pepper. Cook for about 4 minutes without disturbing. Stirring and cook an additional 3-4 min until tender. Removing potatoes from skillet and set apart in a bowl.

Returning skillet to stove & increased heat to high. Adding 2 tsp of butter & stir to melt. Adding steak bites in single layer and cook for 1 min. Flipping or stir steak for another 1-2 min . Removing skillet from heat.
4 t butter, 1 ½ pound sirloin steak
Returning cooked potatoes to skillet and mix. Adding additional salt & pepper if wanted.
